Goat Cheese Flower Blossom Burger w/ Avocado & Chili Mayo

If anyone was to ask me what my favorite food is I would have to go back to my childhood to a good old-fashioned burger. Growing up my favorite smell was during the summer at our lake house with the smell of burgers on the grill. Back then burgers were simpler, and so was practically everything else when you are a child. The fanciest you got was a burger on a toasted English muffin with lots of mayo. Of course, there had to be a side of onion rings & a coke. As onion rings are still to be a great ac compliment to a burger soda is not. I can't remember the last time I actually had a coke. My adult taste buds loved a cold Sam Adams cherry wheat on draft, but when the gluten allergy came to the surface I pick and choose on special occasions to have gluten, knowing that I will feel horrible later. So with summer coming to its official end, I thought that I would pay tribute to one of my good old favorites the cheeseburger.
Now that I'm a little older and my food adventures since my childhood have grown in the depth of different flavors, textures, and heat levels I thought I would put my spin on what I call "The farewell to summer burger" incorporating my stuffed goat cheese zucchini flower blossoms. The concept came from my family's and my love for goat cheese. I have had goat cheese on a burger but putting that goat cheese into a flower blossom and then frying it only to place it on a burger brought it to a whole new level.
To compliment the goat cheese I topped it with fresh slices of avocado for creaminess. For a great crunch to balance the creaminess I served the burgers on a long french bread loaf (gluten-free) that was drizzled in olive oil, seasoned, and slightly toasted on the grill while the burgers were cooking. The bread was topped off with peppery arugula and homemade sriracha mayo. And there is the ultimate part of the burger or any sandwich in my book is the mayo. There's always got to be mayo and lots of it. Aka "Extra Mayo". Todd & I built our love on the mayo. From our first Wawa trip ordering subs late one night when I uttered the words "extra mayo" he knew that I was the girl for him. He stood there in one of his blank stare moments at me saying "Get out of my head".
My recipe for my version of a sriracha mayo has a pleasant kick without bringing you to tears if you want to load it up extra on your burger.
